A TIME TO CHILL

In its natural habitat, an artichoke, after growing through its first summer, experiences a winter of cool (below 50°F [10°C]) but not freezing temperatures. That cool winter convinces the plant that it’s two years old and ready to produce flowers. To trigger the budding response during the first year of an artichoke’s life (for varieties other than ‘Imperial Star’), grow the plants within a temperature range of 35°F to 50°F (2 to 10°C) for at least 10 days. If you can’t prevent the temperature from exceeding 50, run the cold treatment for a longer time.
